Loaded with tender Keystone Chicken, rich barbecue sauce, savory caramelized onions, and melted cheddar on garlic-butter brushed rolls, these crowd-pleasing BBQ chicken sliders are perfect for game day or easy family dinners.
Ingredients
- 1 can (28 oz.) Keystone Chicken, drained lightly and leftover broth set aside
- 3/4 to 1 cup Barbecue sauce, plus more for serving
- 1 tbsp. Apple cider vinegar (optional, for a tangier BBQ filling)
- 1 large Onion, thinly sliced
- 1 tbsp. Butter
- Salt & pepper to taste
- 1 (10-count) package Frozen rolls
- 10 slices Cheddar cheese
- 3 tbsp. Melted butter
- 1/2 tsp. Garlic powder
- 1/2 tsp. Italian seasoning
- Optional toppings: dill pickle chips, coleslaw, jalapeño slices, crispy fried onions, extra caramelized onions, or shredded lettuce
Steps
- Preheat oven to 350°F.
- Heat 1 tbsp. butter in a skillet over medium-low heat. Add the sliced onion and a pinch of salt and pepper. Cook, stirring occasionally, for 15–20 minutes until soft and golden (lower heat if browning too quickly, or deglaze with a splash of reserved chicken broth if sticking).
- While the onions cook, place the frozen rolls on a baking sheet and bake for 6–10 minutes, just until warmed through and lightly golden. Let cool for a few minutes.
- Add Keystone Chicken to a skillet over medium heat, breaking it into bite-size shreds or pieces with a fork. Stir in 3/4 cup barbecue sauce and apple cider vinegar. Cook for 3–5 minutes until hot and glossy (add more BBQ sauce if desired).
- Stir the melted butter, garlic powder, and Italian seasoning together in a small bowl.
- Slice the warmed rolls in half horizontally, keeping the bottoms and tops grouped together if possible.
- Arrange the bottom halves of the rolls snugly in a 9 x 13-inch baking dish or on a rimmed sheet pan.
- Layer with cheese first, spoon the BBQ chicken evenly over the cheese, and top with caramelized onions (add pickles, jalapeños, or crispy onions now if you want them baked into the sliders).
- Place the roll tops over the filling and brush with the garlic herb butter.
- Cover loosely with foil and bake at 350°F for 8–10 minutes, until the cheese is melted and the filling is hot.
- Remove the foil and bake for another 3–5 minutes until the tops are golden brown.
- Pull apart and serve warm with extra barbecue sauce, coleslaw, pickles, or your favorite sides.
