
Breakfast Sloppy Joes
A sloppy joe sandwich for breakfast? Absolutely! This tangy, hearty sandwich is topped with a fried egg for the perfect morning twist. Using recipe-ready Keystone Ground Beef, you can have this breakfast on the table before the rooster crows.
Ingredients
- 1/2 can (28 oz.) Keystone Ground Beef, drained
- 1 cup Onion, sliced
- 1 cup Banana pepper, sliced
- 1/4 cup Red pepper, diced
- 2 cloves Garlic, minced
- 1 tsp. Paprika
- 1 cup Tomato sauce
- 1/4 cup BBQ sauce
- 1 Tbsp. Worcestershire sauce
- 4 Eggs
- 4 Hamburger buns
- 4 Tbsp. Yellow mustard, optional
Steps
- In a large skillet over medium-high heat, heat oil. Add onion, banana pepper, garlic, and paprika. Cook for 2–3 minutes, until onions soften.
- Stir in tomato sauce, BBQ sauce, 1/4 cup water, and Worcestershire sauce. Bring to a boil. Add Keystone Ground Beef, mix well, then reduce heat to medium-low. Simmer for 8–10 minutes, until thickened.
- In a nonstick skillet over medium heat, melt 2 Tbsp. butter. Crack eggs into skillet and fry for 2–3 minutes, or until whites are set to desired doneness.
- Spread mustard on the bottom of each bun, if desired. Add sloppy joe mixture, top with a fried egg, and serve.
