Easy Spring Rolls

These fresh and colorful spring rolls are simple to make and even more fun when you get the kids involved. Using tender Keystone Chicken as the protein makes them quick to prepare for a light meal or snack.

Ingredients

  • 1 can (28 oz.) Keystone Chicken, drained and diced
  • 6 Rice spring roll papers
  • 1 Red pepper, thinly sliced
  • 2 Carrots, thinly sliced
  • 1 Yellow bell pepper, thinly sliced
  • 1 bunch Cilantro
  • 1/4 head Red cabbage, thinly sliced
  • Cream cheese, sliced into thin strips

Steps

  1. Dip a rice paper wrapper in warm water for 3–4 seconds, or hold under running water, until fully moistened. Lay the wrapper on a clean, flat work surface.
  2. Near the bottom center of the wrapper, layer red pepper, carrots, yellow bell pepper, cilantro, cream cheese, Keystone Chicken, and red cabbage.
  3. Fold the bottom edge over the filling, then fold in the sides. Roll tightly to seal. Repeat with remaining ingredients.
