Chicken Stir Fry with Peanut Butter

Ingredients

  • 1 can (14.5 oz.) Keystone Chicken, drained
  • 1 Tbsp. Garlic, minced
  • 2 Tbsp. Butter
  • 2 cups Vegetables, mixed
  • 1/2 cup Peanut butter, crunchy
  • 4 Tbsp. Orange juice
  • 2 Tbsp. Chili sauce
  • 1 1/2 Tbsp. Sriracha
  • Cilantro, fresh, to taste
  • Red pepper flakes, to taste
  • 2 cups Rice, cooked

Steps

  1. In a large skillet, sauté the garlic, Keystone Chicken and mixed vegetables in the butter for about 5 minutes.
  2. In a microwave-safe bowl, combine the orange juice, chili sauce, sriracha and peanut butter.
  3. Microwave in 30-second increments until the mixture is fully combined.
  4. Pour the sauce into the skillet and stir to coat the chicken and vegetables.
  5. Add red pepper flakes and cilantro to taste.
  6. Serve over cooked rice.
